Nikki Hazamy may not have been channeling that rich history when she opened The Corner Beet ten years ago in Capitol Hill. Yet today, her cozy café has become a modern melting pot for community, delicious vegetarian and vegan food, and vibrant events.
But The Corner Beet doesn’t just serve up tasty meals. Hazamy started her journey by co-founding Gypsy Juice after moving to Denver from New Jersey. The café features an evolving menu with breakfast, lunch, and weekend brunch options, and even serves gluten-free meals. Almost everything is made from scratch, using fresh ingredients from local suppliers. You’ll find jam from Grateful Bread Co., mushrooms from Jacob’s Mushrooms, and coffee from Pablo’s Coffee.
“Even meat-eaters love our food,” says Mia Kate, the café’s general manager. That’s likely due to the satisfying and familiar flavors of their meatless dishes. The menu features a generous breakfast burrito, a hearty breakfast sandwich, and toast topped with a unique beet butter. And those who say vegan pastries can’t be delicious clearly haven’t tried their maple-cinnamon doughnuts.
The drink selections are just as inviting. Alongside classic coffees and teas, you’ll find superfood lattes that add a twist with ingredients like mushrooms and beet powder. Housemade syrups go from vanilla to seasonal specialties that keep the menu fresh.
The Corner Beet has benefited from a growing trend towards plant-based diets and more mindful eating habits. A 2023 survey from the Plant-Based Foods Association shows that 72% of Americans are incorporating more plant-based foods into their diets. In a world where people are increasingly aware of how food choices impact the environment, this café stands ready to serve the shift.
