35 Combined Violations at Two Low-Performing Facilities: Key Insights You Need to Know

LUBBOCK, Texas (KCBD) – Each week, we dive into restaurant inspection reports to highlight the good and the bad in local dining.

It’s easy to overlook minor violations, but even small mistakes can pose health risks. Here’s a glance at recent inspections that flagged some concerning issues.

Corralito Steakhouse at 4223 82nd earned 18 violations:

  • Raw bacon was stored above ready-to-eat breading.
  • An employee touched cheese without gloves.
  • Several items were found in hand sinks, which should only be for washing hands.
  • Gloves were put on without washing hands first.
  • Some utensils were damaged and should be in good condition.
  • Toxic items were stored incorrectly.
  • The dishwasher failed to sanitize.
  • No test strips were available for checking sanitizer levels.
  • A waste pipe was leaking.

The inspector noted that these violations suggest a lack of food safety knowledge among management.

Core also struggled with 17 violations:

  • Packaged sliced cheese was stored with unpackaged shredded cheese.
  • A personal drink was above cleaned utensils.
  • Missing coving near the walk-in cooler.
  • No covered receptacle in the employee restroom.
  • Lack of hand washing signage at the server station.

These violations were mostly resolved during the inspection.

Subway at 5214 98th St. also had 17 violations:

  • Sanitizer solution was too weak.
  • Employees didn’t wash their hands after handling different tasks.
  • A hand sink was blocked by a meat slicer.
  • The 3-compartment sink was overloaded.
  • Toxic items were stored improperly.
  • A mop bucket with stagnant water remained on site.

Again, the inspector pointed to a lack of food safety knowledge among management.

Recent statistics show that about 1 in 6 Americans get sick from foodborne illnesses each year, according to the CDC. This reinforces how crucial strict hygiene practices are in restaurants.

Despite the issues listed above, many violations were corrected on-site during inspections.
