The vibrant fields of Ireland may be far away, but you can experience their flavors right in Niwot, Colorado. Meet Craugh, a food truck run by the husband-and-wife team of Darragh and Margaret Byrne. They bring a taste of Irish cuisine with a focus on sustainability.
Margaret, an American, met Darragh in Ireland during college. They bonded at a farmer’s market, united by their love for sustainable food. After the birth of their daughter, they moved to Boulder in 2021 to be closer to family. Darragh, originally from Dublin, drew inspiration from his time working in upscale restaurants, including The Flagstaff House, to share authentic Irish food with Boulder County.
In 2023, they launched a catering business, attracting followers with unique dining experiences. The following year, they seized the chance to buy a food truck, serving from The Wheel House in Niwot and even traveling for events up to two hours away. Their menu resembles cozy pub fare: hearty burgers, crisp fries, and salads.
The Dublin Burger is a standout, featuring fennel, Ballymaloe Relish, aioli, and Dubliner cheese. The summer menu also includes a classic smashburger and a kid-friendly version, along with Irish-style fries topped with cheese or a light red curry, which Margaret describes as a popular late-night snack in Ireland. They also create specialized items for occasions, like a bacon barbecue burger for the Fourth of July.
As seasons change, so does the menu. In fall and winter, expect comforting stews and shepherd’s pie. “Last year, some regulars came three times a week just for shepherd’s pie,” Margaret shared. They listen to their customers and adjust the menu based on feedback and popular demand.
Each bite is both refreshing and familiar, a goal for Margaret and Darragh. “We want food to be approachable,” Margaret explains. They’ve worked in various restaurants, from upscale to casual, and understand that many can’t afford high-end dining. After becoming parents, they felt a shift in their ability to access quality food. Their mission is to offer delicious, affordable options that can satisfy everyone.
This philosophy shapes their ties with local farms, enabling a farm-to-table dining experience. Throughout the summer, they collaborate with Ollin Farms to host monthly Farm Dinners, blending Irish flavors with fresh, local ingredients. Guests enjoy meals at communal tables, fostering a sense of community over shared, locally-sourced dishes. Reservations are required, and diners bring their own wine to enjoy.
