DENVER – Every day at the Food Bank of the Rockies, a dedicated team prepares thousands of meals for children in after-school programs. One key player is 16-year-old Enrique A. Leal-Zubia, a junior at Arrupe Jesuit High School.
Through his school’s work-study program, Enrique spends Mondays in the kitchen at the Food Bank. Since starting as a freshman, he has already logged nearly 700 hours. By the time he graduates, that number will exceed 1,200.
A standout memory for Enrique was making tamales with Chef Dana Rodriguez from Casa Bonita. As part of the Food Bank’s effort to distribute traditional ingredients before Navidad, Chef Rodriguez shared her own recipe. “These kids sometimes might not eat at home, so it’s vital they have meals here,” Enrique said. “Helping them is a great feeling.”
John Knight, executive chef at Food Bank of the Rockies, has seen Enrique grow into a valuable team member. “He’s been here almost as long as I have,” Knight said. “Everyone looks forward to working with him.”
Enrique’s journey reflects Isaac Asimov’s quote: “Every book is a new journey.” Starting as a shy freshman, he has transformed into a role model. Cecilia Nuñez, a program associate at Arrupe Jesuit, noted, “It’s amazing to see him grow into this man for others.”
Enrique’s parents, Enrique and Yadira, are proud. They see him balancing sports, youth group activities, and his internship with dedication. Yadira said, “He does this from his heart. We remind him every day that big things will come.”
Recently, Enrique received the Denver7 Everyday Hero award. “This was a complete surprise,” he shared, clearly touched by the recognition.
His commitment goes beyond hours worked; he hopes to inspire other young people. “Being a good role model means a lot to me, especially for the cause,” he explained.
The Denver7 7 Days to Help End Hunger campaign starts on September 22. This annual event raises funds to combat food insecurity in Colorado. It’s a crucial cause. According to the USDA, about 10.5% of U.S. households were food insecure in 2021, affecting millions of children.
