Meet Oklahoma’s New Extension Specialist: Championing Food and Nutrition Security for a Healthier Future

As food insecurity rises in Oklahoma, Oklahoma State University Extension is bringing in Nila Pradhananga as the new state specialist for food and nutrition security. She’s also an assistant professor in the Department of Nutritional Sciences.

Pradhananga explains that food security means having enough food, while nutrition security focuses on getting food that’s healthy. She emphasizes that food isn’t just nutrients; it’s also influenced by culture and community. For instance, many people live far from grocery stores. If the closest one is 20 miles away, getting fresh food becomes a challenge. Even if people want to eat well, distance and cost can block their efforts.

With increasing chronic diseases in Oklahoma and across the U.S., Pradhananga aims to empower residents to make better food choices for their health. She believes that nutritious eating is crucial for preventing such diseases.

Originally from Nepal, Pradhananga’s interest in nutrition stems from her childhood, where food was central to her culture. She developed a passion for food systems early on, realizing how important food is for health. Her academic journey took her from a Bachelor’s degree in nutrition at McNeese State University to a Ph.D. in nutrition at Louisiana State University. While in Louisiana, she worked on projects with the CDC’s High Obesity Program, which helps underserved communities access healthier food choices.

Pradhananga is enthusiastic about connecting with people across Oklahoma. “I love meeting new folks and hope to make a real impact on their lives,” she says.

Recent statistics highlight the urgent need for this work. According to Feeding America, more than 1 in 6 Oklahomans face food insecurity. This number is higher for families with children, emphasizing the importance of initiatives that focus on nutrition education and access.

Experts agree that improving food environments can lead to healthier communities. As Pradhananga looks ahead, her mission is clear: to help Oklahomans navigate the barriers to good nutrition and foster healthier lifestyles.
