Food Truck Tuesdays: A Taste of El Guapo

Food Truck Tuesdays are back in town until November 15 on San Benito Street. Alejandro Ceja, who runs El Guapo, is excited to serve the evening crowd. After more than six months at the Hollister Farmers’ Market, he’s eager for this change of pace.

He loves the energy of serving people who come specifically for a meal. “At the Farmers’ Market, it gets really busy,” he shared. “Here, it’s all about the food.”

With quieter crowds, Ceja enjoys experimenting with new dishes. Last year, he introduced grasshopper tacos, and they’ve been well-received. “I can play with flavors and see what people like,” he said.

One standout is his Blackened Salmon Bowl, loaded with protein. Now, he offers a range of teriyaki bowls, featuring options like chicken, shrimp, and beef. “It’s great for those looking for healthier choices,” Ceja noted. He’s even noticed personal health benefits from eating his creations.

Food trucks have flourished in Hollister but competition has increased too. Ceja reflects, “It’s not so much competition as it is variety. But I’d rather set up in more unique spots.” Recently, he ventured to Cottage Creek Vineyard in Morgan Hill, where guests praised his cuisine.

Ann Marie Saxs, a staff member at the vineyard, emphasized Ceja’s commitment to fresh ingredients. “He accommodates food allergies and is always kind to everyone. His food is simply delicious,” she said. Saxs loves the garlic shrimp tacos, which are cooked to perfection.

Beyond food trucks, Ceja is considering opening a full-scale restaurant. “A brick-and-mortar could help with storage and efficiency,” he explained.

He continues to enjoy his food truck journey. “Seeing people excited about my dishes is the best part. It reassures me I’m doing well,” he said.

  • Fish Tacos: The top seller, featuring wild cod with a cilantro-lime dressing. They’re delicious without being too heavy.

  • Chicken Flautas: Made with local tortillas and rotisserie chicken, these flauntas are crispy yet light, served with tasty sides like sour cream.

  • Beef Bulgogi Bowl: A mix of prime meats marinated in savory sauces, topped with Japanese furikake for an umami kick. Perfect for takeout!

El Guapo’s Future:

Ceja aims to balance the food truck experience while planning for more permanent options. “I want to continue to connect with people while also offering more,” he said.
