It comes from the shoulder of the cow and is a smaller cut than brisket, which mainly comes from the chest. Both cuts are tough due to their heavy muscle use, but the cooking process can make a big difference.

Traditionally, brisket is slow-smoked for hours. This method breaks down the tough fibers and creates a flavorful crust, known as the bark. Thomas explains, “With a chuck roast, you can achieve similar results in less time. It only takes about 6 hours in the smoker, compared to up to 16 for brisket.”

The reason briskets take longer is that they contain more connective tissue. Smoking longer helps develop a better bark, which is a combination of spices, rendered fat, and smoke. “Unscientifically, bark is the best part of barbecue,” Thomas adds with a laugh.

You can still get great bark on a chuck roast. Use a thick spice rub and maintain a temperature between 225°F and 275°F. Keep it uncovered to start, spraying with beef stock to keep it moist. Once the bark forms, wrap the meat in foil until it’s tender.
