Noodles are a key part of life in Chongqing. Known locally as xiaomian or small noodles, these spicy treats are more than just a meal; they represent the city’s lively food culture. The noodle industry here has grown significantly, with an annual value exceeding 56 billion yuan (around $7.9 billion).
Chongqing is home to about 86,000 noodle shops. However, until recently, most were small family-run businesses. This led to issues like inconsistent flavor and branding, making it hard for the industry to grow.
To tackle these challenges, Dadukou District took inspiration from other successful food trends. They initiated the development of the Chongqing Xiaomian Industrial Park in 2021. This park aims to unify resources and create “ready-to-produce and ready-to-cook” noodles.
More than 80 companies have joined this park, helping to standardize important factors like noodle texture and chili oil spiciness. Thanks to these innovations, it’s now possible to produce large quantities of high-quality noodles.
Inside the Chongqing Jinguyuan Food Technology Company, automated production lines are hard at work. By fine-tuning the levels of flour gluten and perfecting drying methods, they maintain consistent flavor across products. Once prepared, these noodles are shipped across the nation.
Fu Yong, the company’s chairman, emphasizes the importance of partnerships with universities. “We focus on extending shelf life and ensuring a consistent taste for everyone, even outside of Chongqing,” he explains.
New trends in the industry include creative seasoning options. A recent event in Chengdu attracted huge crowds, generating over 5 million yuan in sales through live cooking and tastings. One local resident, Li, said, “The spicy, numbing aroma is what makes these noodles special.”
Seasoning brand Xiangliao has become popular thanks to clever marketing strategies. Co-founder Yin Dongqin notes, “We grew our following through platforms like Douyin, connecting with people through live-streams and tastings.” They offer eight unique flavors based on customer feedback and have built a strong social media presence with over 5 million followers.
The demand for ready-to-eat Chongqing noodles is growing both in China and abroad. The city’s commitment to the xiaomian industry has created around 500,000 jobs and boosts daily noodle sales to over 12 million bowls.
In addition to the local market, there’s a significant international presence. Pre-packaged noodles ship worldwide, including to the U.S. Companies like Yongheji Food have received FDA certification, allowing them to sell in major retailers like Costco.
Chongqing’s unique position along the Belt and Road Initiative has turned it into a trading hub. Local companies now export to over 30 regions, including Thailand and Singapore, with annual overseas sales exceeding 40 million yuan.
Recent events, such as the Chongqing Noodle Promotion Season, showcase the global interest in this dish. Investments totaling 1.345 billion yuan have been made to develop brand strategies and export initiatives, promising exciting growth ahead for this beloved culinary staple.
