This week, let’s explore Soul Bowls, a unique eatery where healthy eating meets delicious flavors. Located in Scotch Plains and Metuchen, Soul Bowls began as a food truck in 2017 and has now blossomed into a popular plant-based restaurant.
Sisters Alicia and Michelene Lambros, who founded the restaurant, draw inspiration from their Greek and Italian heritage. They focus on serving portions that are satisfying without being overwhelming. Alicia says, “Healthy eating can be delicious and satisfying,” which perfectly sums up the philosophy at Soul Bowls.
At Soul Bowls, everything is plant-based, meaning no meat or dairy is used. They prioritize organic ingredients and whole foods. Alicia emphasizes that they aim for a healthy lifestyle rather than promoting dieting: “Diets are temporary. Lifestyle is forever.”
The menu is exciting and varied. Popular dishes include the pbnj bowl, featuring açai, Soulnola® (a granola substitute), banana, and peanut butter, all for $13.50. Another favorite is the love butter bowl, which combines açai, bananas, peanut butter, and chocolate chips for $14.00. Both dishes prove that healthy food can be rich and flavorful.
I had the chance to try several offerings. The pbnj was unlike a typical peanut butter and jelly sandwich; it was incredibly rich and flavorful. The love butter bowl had a delightful hazelnut taste, thanks to the Soultella® spread used in the mix. On a chilly day, I opted for a warm oatmeal bowl ($12.00), filled with oats, chia seeds, and lots of coconut. It was sweet, creamy, and comforting.
I couldn’t stop there! I also sampled the detox juice ($9.00), a refreshing blend of apple, pineapple, jalapeño, and ginger. Finally, I finished with the healer shot ($4.00), infused with turmeric, ginger, lemon, and a dash of black pepper. It had a strong kick but was surprisingly enjoyable.
Alicia believes that food can be medicinal. She mentioned, “We are what we eat,” highlighting the intent behind their carefully crafted recipes. Soul Bowls truly showcases that you can enjoy eating healthy without compromising on taste.
