After nearly 20 years, Happy Gillis in Columbus Park has closed its doors. The restaurant shut down last July, facing air conditioning issues and staffing troubles. Now, the space is getting a fresh start with Helen Jo and Johnny Leach, who run The Town Co.

The new spot, Dear Donna (549 Gillis St., KCMO), will open early this year. While they plan to update the interior and menu, they aim to keep the welcoming vibe. Expect a lunch-focused menu with brunch options, counter service, select cocktails, and Helen Jo’s famous pastries.

In exciting news, beloved ice cream brand Betty Rae’s is expanding. They now have 11 shops around the metro. Recently, they opened their second location in Lee’s Summit at 1636 S.E. Blue Parkway, Lee’s Summit. The first Lee’s Summit shop is inside a Cosentino’s Price Chopper at 251 S.W. Greenwich Drive, Lee’s Summit.

With plans for a Liberty location too, these shops join Betty Rae’s others in Waldo, the River Market, Olathe, Prairie Village, Overland Park, Shawnee, Merriam, and even locations in Omaha. They offer 26 house-made flavors, from classic vanilla to unique options like cereal milk and gooey butter cake. Recently, they introduced a vegan and gluten-free waffle cone, making it easier for everyone to enjoy their treats.

Meanwhile, the Italian Sausage Co. is making its mark in the River Market. Known for gigantic sandwiches, they are expanding from their Gladstone flagship to a new location behind Harry’s Country Club at 518 Grand Blvd., KCMO. This site will not only serve their famous sandwiches but also feature an East Coast-style breakfast menu and an espresso bar, aiming to create a lively and convenient dining experience. The grand opening is set for February.

Another exciting development comes from BKS Artisan Ales, a favorite brewery in Brookside. They are opening a second location in the Crossroads at 1701 McGee St., #400, KCMO. Known for fantastic IPAs, this new spot will have space for around 50 guests, combining indoor seating and an outdoor patio.

Finally, Blackhole Bakery has opened a new location in West Plaza, offering a bodega-style feel. Opened in late December at 1702 W. 45th St., KCMO, this bakery will serve its signature pastries, bagels, and a full coffee bar along with new sandwiches and grab-and-go items prepared with local chefs. While the original location emphasized convenience, this new spot aims to create a cozy neighborhood cafe atmosphere.

These fresh additions to the local dining scene can bring much excitement and flavor to the community, highlighting the resilience and creativity of local business owners as they adapt and grow.
