In the fall, news broke that five out of nine vendors were set to open at Cambridge’s new Eastern Edge Food Hall. Now, a sixth spot has been confirmed: Lone Star Taco Bar will join the lineup.
Located at 290 Main St in Kendall Square, Lone Star Taco Bar will share space with popular eateries like Clover, Juicy Jay’s, and Việt Citron.
Lone Star Taco Bar’s owners, Aaron Sanders and Max Toste, bring a rich culinary background to the table, having spent their formative years in Texas and Southern California. Their menu is packed with bold flavors reminiscent of the vibrant taquerías of Austin, Dallas, Los Angeles, and even Mexico City.
Originally launched in Allston in 2012, Lone Star made its way to Cambridge in 2015, winning over fans with its modern Tex-Mex street food. Think tacos, tortas, and small plates, perfectly paired with a selection of mezcals and tequilas. Sanders and Toste also own Deep Ellum in Waltham and Lenora in Portland, Maine, showcasing their diverse culinary talents.
The Eastern Edge Food Hall is strategically located near the MIT campus and is set to open in early 2026. This spot aims to become a community hub, blending unique dining experiences under one roof.
According to a recent survey by the National Restaurant Association, 78% of consumers say they enjoy trying new eateries, highlighting the growing trend of food halls as fashionable dining spots.
