ST. JOSEPH, Mo. — A local eatery, Tiffany’s Diner, is gaining popularity after relocating from Gower to St. Joseph in December 2022. Owned by Tiffany Parker, this diner specializes in homemade comfort food that brings a taste of home, featuring dishes like tenderloins, Reubens, biscuits and gravy, and breakfast burritos.
The diner’s journey has been impressive. It started as a food truck and transitioned to a storefront, reflecting Tiffany’s ambitions. “I wanted to move here to be closer to my husband and to tap into the opportunities in a bigger town,” she shared.
Since opening at 1329 S. Belt Highway, next to Dollar General, Tiffany’s has enjoyed a boost in customers. The diner officially reopened on December 2, and word-of-mouth has played a crucial role in bringing in new faces. Tiffany noted, “We’ve been way busier here than before,” despite some initial challenges like longer wait times.
As Tiffany navigates this new chapter, data shows that small businesses in growing towns often experience rapid customer increases when they adapt their offerings to local tastes. According to a recent survey by the National Restaurant Association, 75% of consumers prefer dining at businesses that invest in their community. This aligns well with Tiffany’s commitment to serve her new neighborhood.
The diner operates Tuesday through Saturday from 6:30 a.m. to 3 p.m. and Sundays from 6:30 a.m. to 2 p.m., providing a cozy spot for breakfast and lunch. With growing demand, Tiffany is not just serving meals; she’s becoming a part of the St. Joseph community, shaping her business one plate at a time.
