Billings is about to get a tasty upgrade with three new chain restaurants opening in the West End. The addition of these eateries introduces Korean barbecue, toasted subs, and classic American cuisine to the area’s dining scene.

Cupbop, a Korean barbecue spot, is already attracting customers with its unique concept. Instead of traditional dining, it offers build-your-own bowls filled with tasty ingredients and flavorful sauces. Located at 2564 King Ave W, Suite A, Cupbop is in its soft opening phase and will celebrate its grand opening on January 29. Bryan Layton, the owner, emphasizes, “Our sauces are what set us apart.” He and his wife, who have years of experience with Great Harvest Bread, aim to refresh Billings’ food options.

Customers have reacted positively: “There are tons of burgers, but nothing like this,” shared one customer, Sean Matuk.

Next up, Cheba Hut, a toasted sub shop, is preparing to open by the end of the month at 824 Shiloh Crossing Blvd. Known for its cannabis-themed branding, the restaurant boasts over 20 subs, each named after popular marijuana strains. However, there’s no THC in any of their products. “It’s all about the food and good vibes,” said assistant general manager Sagen Feuer.

Interestingly, Cheba Hut’s origins trace back to Arizona in 1998, and now it has locations across different states. Their sub sandwiches and relaxed atmosphere are expected to draw a crowd.

The third upcoming venue is Doc Holiday’s Roadhouse, which will take over the former Gusick’s location at 760 S. 20th St. West. This chain, which started in Williston, North Dakota, offers a variety of dishes, including pizzas and steaks, all wrapped in cowboy-style decor. As they prepare to open next Wednesday, they anticipate providing a hearty dining experience.

With these three new restaurants, Billings is gearing up for more variety in its dining options. The city, known for its adventurous food scene, seems ready to embrace these fresh tastes and experiences.
