- Heated kolaches were under the required 135°F.
- Dirty paper towels were lacking in the restroom.
- Certain food items lacked date markings.
Despite addressing most violations during the visit, the facility struggled with managing food safety training among its staff.
Sakura Noodle House and Sushi Bar at 4520 50th Street recorded 26 violations. High-risk issues included:
- Cooked rice was held too long without proper disposal.
- Raw salmon was stored above ready-to-eat jalapeños.
- Presence of residential pesticides in the kitchen.
Proper labeling was missing for toxic items, raising safety alarms.
Tikka Shack at 6620 Milwaukee had the most severe issues, with 27 violations found. Among them:
- Raw chicken stored over cooked chicken.
- Outdated ready-to-eat items remaining past their usage date.
- Live pests discovered in the food prep area.
Inspectors highlighted the management’s inadequate food safety knowledge due to the severity of these violations.
