The Hawaiʻi Department of Health has shut down Jade Palace 2 in Kailua-Kona due to serious food safety violations. This restaurant, run by Minh Tuan Tran, received a red “closed” sign on February 19. It must stay closed until a follow-up inspection shows that all issues have been fixed.
During a recent inspection, inspectors found several alarming violations:
- Both live and dead cockroaches were present, including on food-contact surfaces.
- Food wasn’t stored properly, risking contamination.
- Ready-to-eat foods in the fridge lacked proper date markings.
- The premises were not pest-free.
- The mechanical dishwasher wasn’t dispensing enough sanitizer.
- Hand-washing sinks had no soap and were used for other purposes.
- General cleanliness and maintenance were lacking.
The Department of Health has outlined necessary corrective actions for Jade Palace 2:
- Discard all contaminated food items.
- Increase pest control services and submit the report to the Department.
- Clean and disinfect all surfaces thoroughly.
- Remove unnecessary items that could attract pests.
- Retrain staff on food storage and date marking.
- Repair the dishwasher to ensure proper sanitization.
