SALT LAKE CITY — Mexican cuisine is more than just tacos and burritos. It varies significantly from region to region. For example, the food in Baja California, where Ensenada is located, offers a distinct taste that differs from other parts of Mexico.

Chef Alfonso Brito, co-owner of Monarca in Salt Lake City, highlighted this diversity at an engaging workshop featuring Oliver Seki, a chef from Ensenada. Seki introduced a unique blend of flavors called Japan-Baja, combining traditional Japanese techniques with Baja’s fresh ingredients.

The event, organized with the Mexican Consulate in Salt Lake City, aimed to celebrate Mexico’s rich culinary heritage. The collaboration between the consulate and local institutions like Salt Lake Community College fosters cultural exchange and enhances local culinary knowledge.

During the workshop, Seki and his assistant, Alejandro Blanco-Rosas, prepared a delicious tuna tartar. This dish featured bluefin tuna mixed in a homemade mayonnaise, showcasing Seki’s commitment to traditional cooking methods. He commented on the effort involved: “The process is tiring, but it’s the most traditional way to make mayonnaise.”

Brito sees this event as a chance for local food lovers to explore new tastes. He often experiments with different influences, blending Mexican ingredients with styles from Peru and the Mediterranean. “We get creative with local proteins, like eel and elk. We even have tacos with caviar,” Brito noted.

Much like Seki, who emphasizes seafood due to Ensenada’s coastal location, many chefs today are turning to fusion dishes. This trend reflects a broader movement in the culinary world where flavors and techniques cross borders, making dining experiences more diverse and exciting.

As cuisines merge, the conversation around food continues to evolve. With 68 distinct cultural groups, Mexico’s culinary landscape is as vast as its people. Each dish tells a story, inviting diners to explore, taste, and appreciate the world on their plates.

In a recent survey by the National Restaurant Association, 58% of chefs indicated that they would add globally inspired dishes to their menus this year. This reveals a growing appetite for culinary exploration and fusion among diners.
