Aaron and Monica Cannon moved from San Diego to Wilmington with a dream of starting a food truck. When they arrived, they quickly noticed a lack of food trucks in the area. “They were everywhere in California,” Aaron said, “but there were only four or five here at the time.”
After years of experience as a chef, Aaron began working in local restaurants before launching A&M Red Food Truck. In 2025, they will celebrate a decade in business. “That’s a long time for local food trucks,” he noted.
The menu at A&M is simple yet versatile. “It works because it’s adaptable,” Aaron explained. Their offerings include sliders, tacos, and loaded tots. They often customize these dishes to suit different events and preferences, including gluten-free options.
During the pandemic, the Cannons found success by visiting neighborhoods a couple of times a month. This connection with the community continues to thrive today, alongside their appearances at events and local venues like Cape Fear Community College.
When talking about popular menu items, Aaron highlights the shrimp and fish tacos as big favorites. He also recommends “The Triple B,” a burger featuring a house-made blend of ground beef and bacon, topped with more bacon and cheese, nestled with fresh lettuce, tomato, and onion. At college campuses, their loaded tots quickly become a hit.
The Cannons are passionate about their work and the community. They aim to keep their food truck running as long as possible. “It’s a fun way to be part of the community,” Aaron shared. Monica even manages a Facebook group for local food truck operators, emphasizing the idea of mutual support among local food businesses.
“We all support each other,” Aaron said. He encourages everyone to explore what local food trucks have to offer, even by trying just a small dish. It’s all about celebrating the diverse flavors in the area.
