“Greek food is often viewed as healthy,” said Victoria Levi Woolley from Saison Hospitality. “While other places may offer lean proteins or salads, Mediterranean restaurants present a different vibe — they’re like a wellness retreat for your stomach.”

According to Technomic’s 2025 report, the fast-casual sector grew by 6% to nearly $77 billion. In comparison, quick-service dining only saw a 2.4% increase. This shift shows a growing preference for food that is both good for you and delicious, especially as health trends gain traction among diners.

Cava stands out, boasting a 22% increase, contributing to over $1 billion in sales. Taziki’s Mediterranean Café saw a 10% rise, while Lebanese chain Naya achieved a remarkable 41% growth, nearly matching Cava’s average per-unit revenue of $2.93 million.

Hakki Akdeniz, owner of several Mediterranean restaurants, believes this cuisine represents “clean luxury.” He says, “Customers want both flavor and wellness. Dishes with bold flavors, grilled meats, and fresh ingredients appeal to today’s fast-food patrons.”

Experts from the food industry stress that Greek cuisine is leading this fast-casual trend, capturing 29% of the revenue in the Mediterranean sector as of 2024. Woolley noted that Greek restaurants focus on delivering delicious, healthier options rather than over-complicating their menus. “In 2026, Greek is chic,” Woolley said.

This movement isn’t just about sales; it reflects changing consumer preferences. More diners seek transparency in food, as social media amplifies discussions on health and wellness. Apps like Yuka help people understand the impact of what they eat, with over 80 million users navigating food labels to make informed choices.

With the rise of Mediterranean cuisine, it’s clear that a shift is happening in how we view fast-casual dining. As health and flavor go hand in hand, expect Mediterranean food to keep climbing in popularity.
