Laurel just welcomed a new gem—La Taqueria. Miguel Hernandez, a veteran, opened his first restaurant after four successful years running a food truck. Located at 401 E Main St, La Taqueria offers a sit-down space for 45 customers, complete with a full kitchen and catering options.

Hernandez’s journey began in Tijuana, where his love for food ignited. He expressed amazement at how far he’s come. “I never thought I would have a place,” he said, reflecting on his humble beginnings.

On opening day, eager customers lined up to dive into the expanded menu. “We love Mexican food and are excited to try something new,” said Amy Grandpre, who joined the celebration with a friend. The buzz in town suggested that Laurel welcomed another dining option.

Isaac Nieto, a former employee, was equally excited. He knew the restaurant would feature some unique items not available from the food truck. “We were anticipating what the new space would offer,” he shared.

Hernandez plans to keep operations flexible, opening from Thursday to Saturday while still running the food truck for events. Plans for breakfast items and special themed days, like “Torta Tuesdays,” are on the horizon. “With this space, we can do so much more,” he commented, humorously noting that the kitchen is large enough for multiple food trucks.

A pivotal moment for Hernandez was placing fifth at last year’s World Food Championships in Indianapolis with a traditional torta recipe. This achievement boosted his confidence to take the plunge into a permanent location. “If they thought we were good enough to be in the top five, maybe we should offer this to our town,” he reflected.

His success is deeply rooted in family traditions. Many recipes and skills come from generations of women in his life. “I learned everything from my mom, aunt, and grandma,” he said, emphasizing cultural heritage.

For the grand opening, Hernandez brought his mother from Montana to help cook and celebrate. “She’s the one who taught me everything,” he proudly stated, as his daughters joined him in the kitchen.

Community support was evident. Longtime patrons Duane and Lynn Walker were thrilled to see Hernandez thrive. “We love his food and want to support him,” they said, highlighting the camaraderie in the community.

Hernandez aims to diversify local cuisine. “Each Mexican region has its unique flavors, and mine is inspired by Baja,” he explained. His goal is to share the cultural history behind the dishes with his customers.

As Hernandez embarks on this exciting new chapter, he remains committed to keeping his food truck alive. “I’m ready for this journey,” he said, looking ahead with enthusiasm for his family and the community.
