Bad Moon Saloon has found a flavorful partner in Not Bad Foods, a new food trailer offering a twist on comfort food. This custom-built trailer journeyed all the way from Texas to Milwaukee, driven by culinary veteran Scott Zajork. He brings years of experience from popular local restaurants like Goodkind and St. Paul Fish Company.

Zajork’s past roles helped him connect with fellow chefs and explore various cuisines. “I’ve made great friends in the restaurant world,” he said. His friendship with Kristin and Chris Graves, the owners of Bad Moon Saloon, dates back to their bar’s opening. Located at 4035 S. Clement Ave., the “biker-disco-divey-punk bar” is known for hosting community events, making it an ideal home for his food truck.

“When they needed a food vendor, I seemed like a perfect fit,” Zajork shared. Not Bad Foods marks his second mobile venture. He previously ran Foxfire Food Truck and will offer a familiar favorite: a spicy chicken sandwich inspired by his earlier creation.

The Not Bad Foods menu promises variety, featuring dishes like a beef dip baguette, grilled mortadella with hemp seed pesto, and crispy smashed potatoes. “I like to think of it as comfort food with a twist,” Zajork explained. The goal is to reinvent classic dishes while keeping them recognizable and comforting.

Support from his fiancée, Hannah Dekker, has been crucial in this journey. “She’s been my backbone,” Zajork noted.

Not Bad Foods is expecting to launch by mid-June, operating on weekends initially. They’ll also pop up at local events, such as the June 13 Beer City Cycles Bike Show and BBQ.

As food trends continue to evolve, comfort food is making a comeback, appealing to many who seek familiarity and warmth through what they eat. In a world where culinary exploration is ever-present, Not Bad Foods aims to stand out by offering both classic and creative flavors to patrons. With comfort food gaining traction, as seen in recent surveys showing a 40% increase in demand for traditional dishes, this new venture is well-positioned for success.
