Instructions
- Preheat your oven to 450°F (232°C).
- Heat olive oil in a deep skillet. Sauté onions and jalapeños for about 2 minutes. Add cumin and cayenne, and cook for another 2-3 minutes.
- Stir in the tomatoes, black beans, and green chiles. Let it simmer for 15-20 minutes, so it thickens slightly.
- Make little pockets in the mixture using the back of a spoon. Crack an egg into each pocket. Spoon the mixture around the eggs carefully.
