It’s also the name of Adison Sichampanakhone’s noodle shop, where you can savor both Laotian and Thai dishes at the Lenexa Public Market.

And yes, the food really is saap saap.

Adison and his wife, Jackie Sichampanakhone, also own Ice Cream Bae. Adison draws from his Laotian roots, using his mother’s recipes to guide the menu. Popular dishes include khao poon nam gai, a spicy curry soup, and khao piak sen, a comforting chicken noodle soup.

“He would eat everything I make,” Jackie says, highlighting the family connection to these dishes.

Growing up in the U.S., Adison adds his unique twist to his mom’s recipes. One standout is the ribeye ramen red curry. Traditionally, curry ramen uses pork, but Adison elevates it with juicy ribeye slices. The tender meat simmers in a rich coconut milk broth with lemongrass and galangal, which has a deeper flavor than ginger. This broth beautifully clings to wide egg noodles, making every slurp satisfying.

Laos and Thai cuisine often embraces a “more is more” philosophy. Adison’s ramen is topped with fried shallots, cilantro, basil, sliced onions, and a fresh squeeze of lime, creating a burst of flavor in every bite.

Interestingly, Laos is gaining attention for its culinary scene. Recent studies show a surge in interest in Southeast Asian cuisines, particularly among younger generations. This trend highlights the growing appreciation for authentic flavors and traditional cooking methods. “The community’s response has been amazing,” Adison shares. Social media buzz around his unique dishes has helped spread the word, attracting food lovers eager to try something different.
