One chef, Ken Wan from MAKfam, plans to grill shrimp with his homemade XO sauce. He’s eager to share his unique take on Chinese cuisine. “The food is bold,” he says. Some people fear MSG, but studies have shown it’s safe and just enhances flavor, like any other ingredient. “Moderation is key,” Wan emphasizes, noting that overusing anything can be harmful.

Wan draws inspiration from his Cantonese background. At MAKfam, you can find comfortable dishes like stir-fried noodles and dumplings. He’s even been told his cooking reminds people of their grandmothers—a high compliment in his eyes.

Over the past year, Wan’s talent earned him recognition as a semifinalist for the James Beard Foundation’s emerging chef award and a Michelin Bib Gourmand. But his main focus? “Making sure the food is good and the people are happy,” he shares.

MAKfam isn’t just any restaurant. It’s also a nod to his family’s influence on his cooking. The vibe combines elements of New York’s dining scene with a touch of 1980s Hong Kong flair. Wan aims to transport diners to a different place with every meal.

As the festival unfolds, the buzz on social media shows that many people are excited to try these creations. The Denver Food + Wine Festival also has a purpose. It supports the Colorado Restaurant Foundation, which helps restaurant workers thrive.
