After a brief pause, Licensed 2 Grill is back and ready to delight food lovers with its brand-new food truck and a fresh, seasonal menu. This beloved local eatery first hit the streets in 2015 but scaled back operations during the pandemic. On May 30, they unveiled their new truck at 518 Bank St. in Emmaus, right next to popular spots like Triple Sun Spirits and Weyerbacher Brewing Co.

Open Thursdays through Sundays, the truck aims to provide an exciting dining experience with dishes made from locally sourced ingredients. Chef Robert Johnson expressed deep gratitude for the community’s unwavering support over the years, especially during challenging times. “We’re eager to serve everyone again and focus on quality, creativity, and fun. Our new look only enhances our commitment to great food,” he shared.

Johnson, widely known as “Chef RoJo,” honed his culinary skills at the Culinary Institute of America. His latest menu reflects a shift towards elevated comfort food. In addition to staples like burgers and sandwiches, he’s now curing and smoking his own meats and even raising chickens for fresh eggs. “It’s all about local and fresh,” he said, mentioning their upcoming line of signature seasonings.

The soft opening menu features unique starters like chipotle deviled eggs, fried gnocchi, and crispy Thai chicken wontons. Signature “sammies” include the L2G BBLT, featuring house-cured beef bacon on brioche, and the Memphis Smash Burger, crafted from grass-fed Black Angus. Every week, a special burger will also be showcased. The Johnsons are on a mission to create a diverse and dynamic menu while maintaining their popular classics.

Local diners have reacted positively to the truck’s return, sharing their excitement on social media. Many customers expressed enthusiasm over the revamped menu, appreciating the commitment to quality ingredients. Especially popular have been the marauding flavors of L2G’s famous loaded fries, now topped with unique ingredients like “Squatch Dust” and a signature cheese sauce.

For drinks, Licensed 2 Grill’s location at the brewery and distillery provides plenty of options, enhancing the neighborhood’s overall foodie landscape. This community-focused approach seems timely given the recent surge in food truck popularity across the nation.
