On October 11, 2025, Enzo’s Hideaway at Disney Springs offered a delightful experience called The Mindful Midday Pairing Event. I had the pleasure of attending, courtesy of Enzo’s media relations team.
This afternoon was all about celebrating Italian flavors paired with innovative, alcohol-free drinks from Aplós. Aplós means “simply” in Greek and focuses on providing high-quality, non-alcoholic beverages. Their drinks capture the essence of cocktails without the alcohol, featuring options like Arise, which includes adaptogens. Plus, all their offerings are plant-based, vegan, gluten-free, non-GMO, and low in added sugars.
A Memorable Three-Course Meal
Enzo’s crafted a three-course Italian meal, showcasing seasonal ingredients and classic Mediterranean techniques. Each dish was thoughtfully paired with an Aplós drink, creating a harmonious dining experience.
First Course: Antipasto
This dish featured crispy porchetta, served with arugula, fennel, and a citrus dressing, paired with an Americano drink that had hibiscus bitters and zero-proof sweet vermouth.

The main course was Lumache Alla Vodka Con Gamberi, a delicious pasta dish with grilled shrimp and tomato cream. It was complemented by Coriander Sky, a refreshing drink with lemongrass ginger tea.
