Cory Wilbur has a solution. He created the End of Line Food Truck Park to support Fairbanks’ food truck scene. “It was built for the community,” he explains. His experience running a food truck courtyard in Seattle showed him the value of having a dedicated space for mobile food services.

The food truck park offers essential supports like electricity, water, sewage connections, and a shared dining area. This allows food truck owners to focus on serving customers without worrying about logistics. The park has 12 spaces, six of which have utility hook-ups.

Nuttamon Molinary, who runs Anchan Thai Fusion, appreciates the benefit of indoor dining during cold months. “Without a building, customers might have to order and go home,” she says. Wilbur echoes this sentiment, emphasizing that having a year-round space is vital for winter operations.

The park includes heating for the dining area and features designed to support health guidelines. It’s located at 1243 Noble Street, close to Wilbur’s family sheet metal shop, making it easier for him to assist food trucks.

Interestingly, the growth of food truck culture parallels a national trend. According to the 2022 Food Truck Industry Report, the food truck market is expected to grow by 20% over the next five years. This reflects the increasing demand for diverse food options and more dining experiences.
