A Taste of Community: The Heart Behind Corn Krib
BELGRADE, Neb. – Meet Kyle Cornwell, 27, and his mother, Cyndie. Together, they run the Corn Krib, a cozy restaurant that opened its doors in 2024. The name says it all—Cyndie’s name starts with a C, and Kyle’s with a K.
The Cornwell family shifted gears from farming to running a restaurant. Their journey began when they purchased a local bar, spending countless hours transforming the historic building into their dream eatery.
“We started by borrowing ovens just to get our prime rib cooked,” Cyndie recalled. It was a humble beginning but filled with determination.
Kyle’s passion for food started early. Back in high school, he envisioned a diner decked out in chrome, with spinning tops. Today, that vision has come to life with a menu that celebrates home-cooked meals and Certified Angus Beef. Popular dishes include Corn Krib nachos and the Cowboy Crack burger.
Kyle’s travels inspire new specials. “I love trying different foods and recreating them when I return,” he shared.
The Corn Krib isn’t just a restaurant; it’s a community hub. It’s adorned with antiques and memorabilia, including cattle brands. “Families often come back and search for their brand on the wall,” Kyle explained, highlighting the restaurant’s deep connection to the community.
In September 2025, the Corn Krib faced a tough loss. They honored longtime bartender and childhood friend Kennedi Demuth, who passed away. To commemorate her, they created a photo wall and a special bench. “The support from our community during that time was incredible,” Cyndie said.
Kennedi was with them from the very beginning, and they continue to honor her by serving comfort food and looking after their patrons.
Kyle finds motivation in the small moments. “When I see kids enjoying their meals and smiling, it means the world to me,” he said.
