Korea Taqueria has taken a fresh step by opening a new stall at Franklin’s Table Food Hall. This new spot opened its doors on January 20, marking a big milestone as the restaurant’s third location in Philadelphia in just four years. Starting as a food truck in 2022, Korea Taqueria brings a unique twist by blending Korean and Mexican flavors—an exciting first for this food hall.
Owners Alexander Sherack and head chef Rene Lopez were prompted to set up near the University of Pennsylvania after catering several campus events. “Students and faculty were always asking about us,” Sherack noted, highlighting that there was a demand for their distinctive cuisine.
Despite the variety available at Franklin’s Table, Sherack pointed out that Korea Taqueria faces no direct competition. “There was a real gap for Mexican and Korean food,” he said. Their menu offers burritos, bowls, and tacos that showcase this fusion, making it appealing to students who enjoy quick, flavorful meals.
Korea Taqueria first opened in South Philadelphia; they then expanded to Fishtown. One of their popular items, birria tacos, won’t be available at Franklin’s Table due to space restrictions. Lopez shared that transforming the Franklin’s Table location was seamless since Sherack already managed the previous food stall.
Teamwork is essential for their success. Lopez emphasized the importance of a dedicated team at their various locations, which allows them to focus on refining their recipes. “Having a good team makes all the difference,” he said, expressing gratitude for Philadelphia’s support.
Recent data shows that fusion cuisine, like Korea Taqueria’s, is gaining popularity among younger diners, with over 60% of millennials and Gen Z showing interest in diverse food experiences. This trend aligns with what Sherack and Lopez aim to provide.
Korea Taqueria’s opening adds to an exciting atmosphere at Franklin’s Table, which recently welcomed other new vendors. This blend of cultures and flavors seems to be resonating well with the community, showcasing how food can bring people together in vibrant, urban settings.
