Rodriguez and his wife, Aidee Gonzalez, opened their restaurant in 2004. They were inspired by their longing for traditional dishes from Mexico City. Starting small, they have since expanded their reach, currently operating multiple locations. Their journey hasn’t been easy. In 2016, Rodriguez suffered severe injuries in a car accident, but he persevered through extensive recovery and surgeries. Today, he runs Tortas Insurgentes with the philosophy that great food comes from love.
The ambiance in their restaurants reflects the spirit of Mexico City, featuring bus route signs, luchador masks, and music reminiscent of public transport. Gonzalez takes pride in the success of their business, saying, “What began as a small dream has grown to five locations and attracts not just Mexican or Hispanic diners, but everyone.”
