In 2016, Rodriguez suffered severe injuries in a car accident, but he persevered through extensive recovery and surgeries. Today, he runs Tortas Insurgentes with the philosophy that great food comes from love.
The ambiance in their restaurants reflects the spirit of Mexico City, featuring bus route signs, luchador masks, and music reminiscent of public transport. Gonzalez takes pride in the success of their business, saying, “What began as a small dream has grown to five locations and attracts not just Mexican or Hispanic diners, but everyone.”
