Located in Hell’s Kitchen, Manhattan, Valla Table offers authentic Thai cuisine and has been a local favorite since 2020.

Chef Chuck Valla, who runs the restaurant, has a rich background as a private chef in New York, working for over a decade before deciding to open his own place during the COVID-19 pandemic. With all his client bookings canceled, Valla saw this as a chance to pursue something new.
Growing up, Valla spent a lot of time in the kitchen with his mom and grandma, both of whom inspired his cooking. He often travels to Thailand to source fresh and authentic ingredients for his dishes.
One of the standout offerings at Valla Table is Mom’s Pad Thai. Valla’s personal twist on this classic is inspired by his mother’s recipe, which she adjusted to suit his taste by cutting down on the sweetness.
Another signature dish features crab meat rolled in rice, topped with flavorful curry. Instead of the traditional curry and noodle pairing, Valla’s creative approach transforms it into a unique dumpling-like experience.
The menu also showcases a traditional rice salad from southern Thailand. It features steamed jasmine rice, fresh herbs, seasonal fruits, and a special sauce that brings everything together.
Valla believes his experience as a private chef has helped him understand New Yorkers’ preferences when it comes to Thai food. He makes it a point to cater to various dietary needs, aiming to create a menu that’s inclusive for all.
Valla’s vision is clear: he wants everyone, regardless of dietary restrictions, to enjoy his food. His motto is simple: food for everyone.
