In an interview with The Indian Express, Coutinho explained that the dish emphasizes simple, healthy eating, particularly relevant given the growing obesity issue in India. The vegetarian dish is packed with seasonal superfoods known for their healing and immunity-boosting properties, like winter greens, turmeric, makhanas, sattu, and millets. This carefully crafted meal meets protein needs, provides essential nutrients, and highlights the power of local ingredients.
