Springfield has some amazing food talent, and a great spot to experience it is at Good Spirits and Co.. Their monthly Supper Club is a must-visit. It’s a relaxed dinner where you can enjoy dishes crafted by skilled chefs and mixologists, including pastry chef Kyle Davis, local favorite Angela Houska, mixologist Rogan Howitt, and the versatile Kayce Vandelicht.
I got lucky and scored tickets to the first Supper Club event. The evening started with a cocktail hour. They had a set drink menu, but you can always ask for something special. Since I was seven months pregnant, I asked Vandelicht to whip up a mocktail with a bit of zing, and she did not disappoint!
Davis began the meal with some delicious bread, and he finished with a delightful London fog ice cream topped with tangy lemon gelee. My favorite savory dish was Howitt’s sweet tomato and corn slab pie, served warm and fresh from the oven.
The wild-caught salmon from Vandelicht was cooked just right. Houska’s blistered shishito peppers, paired with lemon aioli and Argentinian shrimp skewers, were a fantastic addition to the meal. I would love to experience that meal again, but I know that the unique flavors at Supper Club are what truly make it unforgettable.
