Colette Lewis recalls the thrill of unwrapping her first Easy-Bake Oven at just seven years old. On that Christmas morning, she eagerly pulled out packets of cake mix as her father plugged it in. Her younger brother, Charles, barely three, couldn’t wait for a taste.
“That was our first time cooking,” Charles reminisces with a smile. “It was good.”
Now, years later, the siblings are cooking together once more—but this time on a much larger scale. They recently celebrated the grand opening of The Toasted Yolk Cafe, located in downtown Birmingham along 20th Street South, between Synovus Bank and Panda Express. This spot is part of the Houston-based Toasted Yolk franchise and marks the company’s 51st location.
“We’re all about great food, generous portions, and a positive vibe,” Charles shared. “That’s exactly what Birmingham needs.”
The energy in the restaurant was palpable as they prepared for the opening. Staff members wrapped silverware, while construction crews worked on final touches. Teams strategized at tables, and the kitchen buzzed with activity as popular dishes were plated.
Colette feels a unique sense of joy watching all this unfold. “It’s all about people bonding over delicious food and engaging conversations. That’s my vision for The Toasted Yolk,” she said.
The cafe comfortably seats 132 customers in a mix of booths, tables, and high tops, adorned with the brand’s welcoming colors: soft cream, tan, yellow, and green. To reflect Birmingham’s culture, they enlisted local artist Dewon Moton to paint two large murals. One features the signature Toasted Yolk dish intertwined with the brand’s logo. The other showcases the motto, “It’s Never Too Early to Get Toasted in Birmingham,” alongside various delicious breakfast items.
Moton expressed pride in contributing to the ambiance. “From the moment you walk in, you know you’re in for a warm meal,” he said. His work aims to create a welcoming atmosphere, inviting diners to enjoy their experience.
Colette and Charles plan to add a third mural honoring Birmingham’s history and iconic landmarks. “The essence of our cafe will embody Birmingham,” Colette stated. “It’s key to capture our city’s spirit and evolution.”
Even the music adds to the cafe’s vibe, providing a mix of Frank Sinatra, Usher, and even “Sweet Home Alabama.” “It will create a pleasant, lively atmosphere,” Charles added.
For three years, the siblings worked diligently to bring their dream to life. After a nine-month search, they finally found the perfect location and constructed the space from scratch, starting with just gravel. A unique touch to the foundation is three scriptures they’ve embedded under the front door: Deuteronomy 8:18, Philippians 4:19, and Proverbs 10:22. These verses symbolize their aspirations for prosperity and community growth.
The warm reception before their opening exceeded expectations. A soft opening was fully booked within two days, surprising Charles and Colette. They received countless messages congratulating them and expressing excitement for the new dining option.
The menu at The Toasted Yolk features a variety of options, from sandwiches and pancakes to omelets and churro doughnuts with caramel sauce. For those wanting a lighter meal, options like the grilled shrimp cilantro salad are available.
Colette emphasizes that many sauces are made fresh daily, including their signature honey mustard. Charles, who partners with a local engineering firm, sees their venture as driven by purpose. “Witnessing our journey from concept to a thriving restaurant is fulfilling,” he said. “We planted a seed in untouched soil, and now it’s beginning to flourish.”
The Toasted Yolk Cafe opens its doors from 7 a.m. to 3 p.m., serving breakfast, brunch, and lunch. They have plans for evening hours and private events under the banner “Toasted Yolk After Dark,” alongside catering and special promotions.
