Food truck enthusiasts in Mitchell have great news: Forking Delicious is back! This beloved food truck, known for its innovative menu and exciting street food, has returned after a short move to Fargo, North Dakota.
Owner Kriston Walsh launched Forking Delicious in 2020. After operating through the 2022 season, she accepted a role at Starbucks, which turned out to be a big adjustment. “Going from a flexible food truck schedule to a job with set hours was a shock,” Walsh admits. Realizing this lifestyle wasn’t for her, she decided to come back to Mitchell, where she now serves delicious meals at various events and sets up at 209 W. Pine when she’s not booked elsewhere.
What makes Forking Delicious special? Walsh offers a rotating menu that changes based on the event and crowd preferences. If another truck is serving gyros, she’ll swap in a different dish so there’s always something fresh for her customers. This flexibility keeps things exciting and makes every visit unique.
Walsh’s cooking mixes flavors from different cuisines, highlighting proteins like shrimp, steak, and pork. Her standout item is birria ramen, featuring tender beef in a rich broth over ramen noodles, topped with fresh ingredients like cilantro and lime. The dish was a lucky accident, created from leftovers, but it turned out to tap into a larger street food trend.
Newer offerings include shrimp tacos, grilled Hawaiian bowls, and a fun Frito burrito filled with meat, cheese, and crunchy chips. One crowd favorite is her hand-cut “truck chips,” which are fried until golden and seasoned to perfection — and they often sell out quickly!
Walsh’s culinary skills are self-taught. Her journey began in institutional kitchens, where she learned the importance of homemade meals. Her time at Club Vega encouraged her to experiment with menu specials, a pivotal moment that shaped Forking Delicious’s creative approach.
“I usually don’t know what I’m going to make until I’m halfway through,” she says with a smile. “But it usually works out, and people seem to love it.” Her passion for cooking shines through every dish she prepares.
Now back in Mitchell, Walsh is committed to her community. Her children frequently help out at events, furthering the family’s connection to the food truck. While opening a full restaurant isn’t on her agenda, she dreams of creating a shared kitchen for other small food businesses and possibly offering family-style meals for takeout. During colder months, she plans to serve comforting soups and sandwiches on milder days.
For Walsh, the joy of running Forking Delicious lies in the freedom to adapt her menu and explore new culinary ideas. “I don’t want to put myself in a box,” she explains. Her innovative spirit keeps the business dynamic and her customers eagerly coming back for more.
