Discover the New Mofford and Giffin Food Hub at App State’s Hickory Campus: A Delicious Addition for Students and Community!

BOONE, N.C. — Appalachian State University has opened the Mofford and Giffin Food Hub at its Hickory campus. This food pantry is an important resource for students facing food insecurity. Local alumni David Mofford ’09 and Zac Giffin made it possible with their generous donation.

The Mofford and Giffin Food Hub is a key addition to the university’s extensive Mountaineer Food Hub network, which includes 17 pantry locations on the Boone campus and an additional site at the App State Academy at Middle Fork in Walkertown.

A ceremony to launch the new hub took place on February 28, marking it a significant moment for the Hickory campus. Attendees included the donors, university leaders, and community members. Sue Polanka, Dean of University Libraries, praised Mofford and Giffin’s commitment to supporting fellow students. "They have wonderful, giving hearts," she said, highlighting the impact they have on App State students.

Polanka, who oversees another food pantry at the Boone campus, emphasized the connection between hunger and learning. “When you are hungry or worried about your next meal, it’s hard to focus on school. With these food hubs, we help students overcome such challenges and thrive,” she explained.

Food insecurity affects many in the U.S. Recent studies show that over 44 million Americans experience this issue at some point. In North Carolina alone, almost 1.2 million people—about 11% of the state’s population—struggle with food access.

In 2024, App State’s food pantry network distributed more than 28,000 pounds of food. This included over 3,000 visits during just the fall semester. "David and Zac are extending this vital service to our Hickory campus," Polanka noted.

Mofford, who grew up in Hickory and graduated in 2009, has always felt a pull to give back. As former president of the Student Government Association at App State, he understands firsthand the challenges students face. His upbringing instilled a deep sense of community support, inspiring him to back this important initiative.

"We’re glad to bring a vital service to the Hickory campus," Mofford shared. "The food hubs across campus offer a safe, nonjudgmental space where students can get the help they need.” His partner, Giffin, also shares this passion. Having dedicated his career to helping others, he is committed to making a positive impact in the Hickory community.

Community support plays a vital role in sustaining the food hubs. Every donation contributes to ensuring that students have access to essential resources.

Appalachian State’s commitment to sustainability extends beyond food security. The university takes a comprehensive approach, addressing economic, environmental, and social factors.
