INDIANAPOLIS (WISH) — Brett Butler, an experienced mixologist, has been making waves with innovative cocktails that capture the essence of fall. He operates Alcomy LLC, a mobile mixology service, where he shares his passion for creative drinks.
Recently, he showcased two standout cocktails: the ‘Nocino Sour’ and the ‘Creme Brulee Espresso Martini.’ These drinks not only offer unique flavors but also demonstrate Brett’s commitment to making cocktail crafting fun and accessible.
“We blend the science of mixology with the art of creativity,” Brett explains. This approach can elevate any gathering or event.
The ‘Nocino Sour’ is a celebration of autumn flavors. It’s made with Angel’s Envy Rum Cask finished Rye, Laird’s Applejack Brandy, Nocino Walnut Liqueur, Licor 43, spiced chai simple syrup, fresh lemon juice, and an egg white (or aquafaba for a vegan option). The combination of walnut and apple brandy gives it a rich taste that warms the palate.
To make it, Brett demonstrates a dry shake—mixing the ingredients without ice to create froth—followed by a wet shake with ice. It’s then strained into a coupe glass and elegantly garnished with an apple slice and star anise.

- 0.50 oz. Licor 43
- 0.50 oz. Spiced Chai simple syrup
- 0.75 oz. Fresh Lemon Juice
- 1 Egg White or Aquafaba substitute
The ‘Creme Brulee Espresso Martini’ offers a delightful twist on the classic drink. It combines bourbon, Hard Truth Hills Cinnamon Vodka, Licor 43 Creme Brulee Liqueur, Kahlua, and cold brew coffee. This cocktail is topped with a caramelized sugar disc and a creme brulee macaron, making it visually stunning as well as delicious.

Through his classes, Brett not only teaches the art of cocktail making but also emphasizes a ‘Farm to Glass’ philosophy. This means using fresh, local ingredients whenever possible, which enhances flavors and supports local farmers.
In today’s world, where handmade craft beverages are becoming increasingly popular, Brett’s approach resonates well with many. A recent survey found that 57% of consumers are more likely to try a drink made with fresh, local ingredients. This trend highlights a growing desire for authenticity and quality.
As Brett Butler continues to innovate, he aims to make mixology a delightful experience. His cocktails reflect both craftsmanship and creativity, adding a new layer to Indianapolis’ cocktail scene.
