In Egypt, koshary isn’t just a trendy dish; it’s a beloved part of daily life. You can find it in busy shops, cozy homes, and shared among friends and family. People might disagree on many things, but they can all agree on the joy of this comforting food. This connection to daily life is why koshary recently made headlines—it was recognized by UNESCO as an Intangible Cultural Heritage of Humanity on December 10, 2025.

Ehab Medhat, an expert in cultural studies, highlighted koshary’s significance. “It’s not just food; it’s a crucial piece of Egyptian culture and history,” he said. Its origins date back to the 19th century during British occupation, when it became popular due to its affordability and filling nature.

Koshary’s appeal comes from its unique blend of influences. Medhat explained, “It reflects Egypt as a crossroads of cultures, where different elements were mixed and made into something distinctively Egyptian.” This dish has evolved over time, becoming a staple that adapts but remains authentically Egyptian.

Making koshary might seem complicated because it involves separate cooking for its ingredients. However, each element adds to the dish’s complexity and flavor. Key components include rice, lentils, pasta, a spiced tomato sauce, crispy onions, and chickpeas. When assembled, they create a delightful mix of textures and tastes.

Behind koshary’s popularity are the countless cooks and vendors who share recipes and knowledge within families and communities. Interestingly, a small village named Al-Abadla stands out in this network. Even though it has no koshary shops, about 90% of its residents are involved in the koshary business, either cooking or supplying ingredients across Egypt.

One notable koshary spot is Abu Tarek, a restaurant with a rich history of over 90 years. Emad Yousery, the restaurant’s media advisor, shared that it began with a portable glass box selling koshary plates. As demand grew, Abu Tarek expanded into a multi-story establishment, emphasizing its importance in Cairo’s culinary landscape. It even set a Guinness World Record for the largest koshary plate in 2015, weighing 8 tons.

The UNESCO recognition of koshary is significant. It highlights the importance of how koshary is made, shared, and taught daily. Yousery stated that this acknowledgment means preserving traditional cooking methods and maintaining high standards. “We must balance our rich heritage with modern demands,” he explained.

Koshary also breaks social barriers. Regardless of one’s background, everyone enjoys the same version of this dish. “Koshary is special because it appeals to everyone, regardless of their socio-economic status,” Yousery noted.

With the global recognition, there’s interest in expanding koshary beyond Egypt. However, Yousery emphasized that maintaining quality and authenticity is crucial. The goal is to represent Egyptian identity and ensure that the dish remains true to its roots.

Koshary’s story is not just about food; it’s about cultural practice, community, and history. The UNESCO designation serves as a reminder of the importance of traditions that are deeply woven into the fabric of everyday life.
