Christopher Witt, a Chicago native, brought a taste of the Windy City to West Michigan with his food truck, Witty’s. Since 2019, he has parked at 720 E. Colby St. from April to October, serving up classic Chicago eats like hot dogs, Italian beef sandwiches, ribs, and thin-crust pizza.
Witt and his wife, Julie, combined their passion for food and hospitality to create a menu that many locals crave but couldn’t find nearby. “We wanted to offer food we enjoy,” he said. “Now, our customers tell us they don’t need to go to Chicago anymore for this kind of food, and that makes me happy.”
The Italian beef sandwich is a standout item, selling for $9.50. It features homemade beef with sweet or hot Giardiniera peppers and provolone cheese for an additional cost. Many enjoy it dipped in au jus, reminiscent of the traditional Chicago style.
Witt’s thin-crust pizza is also popular. The supreme pizza, priced at $23, is loaded with four types of meat. On Thursdays, patrons who spend $35 can enjoy a free order of cheese sticks or potato skins. “We don’t skimp. We want it to taste right,” Witt adds.
Currently, Witty’s is open for lunch from 11 a.m. to 2 p.m., Tuesday to Saturday, with extended hours for dinner on Thursdays and Fridays until 7 p.m.
This food truck phenomenon reflects a broader trend in the restaurant industry. In recent years, food trucks have gained popularity, providing unique dining options and supporting local economies. According to a 2021 report by IBISWorld, the food truck industry has seen annual growth of around 4.8% over the last five years, indicating strong demand.
As more people discover the blend of flavors from different regions, Witty’s is not just filling a niche but also contributing to the local culinary landscape. The celebration of diverse food experiences helps communities thrive and brings people together.
