Curious about the rise of Korean food and drink in Capitol Hill? A big part of the buzz comes from the unique flavors of gochujang, a spicy and sweet chili paste. Plus, the Consulate General of the Republic of Korea in Seattle is passionate about promoting Korean cuisine.
Recently, I attended a Korean cooking competition organized by the consulate and the Korean Food Promotion Institute at the Seattle Culinary Academy. This event featured a showdown between dishes like bulgogi and bibimbap. The winner earned a chance to travel to Korea for the International Namdo Food Festival this October.
Lindsey Moore, a recent graduate from the Seattle Culinary Academy, took home the top prize. She competed against other talented chefs, including Freddi Robinson from Soul 2 Seoul and wildcard competitor Chambo, known from social media for his culinary adventures in Korea.
Korean cuisine is becoming increasingly popular in the area. New venues like Gol Mok Korean Market Bar and Yeobo Cafe and Bar are popping up, offering Korean-American comfort food. Recently, Seoul Mates opened in the former Gokan Sushi space, adding to the vibrant culinary scene.
This enthusiasm for Korean flavors is not new. In the past, other cuisines like Thai enjoyed support from government initiatives to expand their presence abroad. A 2009 article in the New York Times discussed how the Korean government aimed to significantly increase the number of Korean restaurants worldwide. Today, it seems their culinary diplomacy is paying off, especially in places like Capitol Hill.
Interestingly, this year, Washington State designated November 22nd as Kimchi Day, adding another layer of recognition for Korean food culture in the region.
As social media continues to showcase diverse culinary experiences, more people are eager to explore international flavors. Korean cuisine, with its unique ingredients and rich traditions, is at the forefront of this movement.
