Dreamboat and Vulture are officially closing their doors, and it feels unexpectedly early for fans. Kory Stetina and his collaborators at CH Projects created something special in University Heights—a cozy diner and an elegant continental restaurant under one roof. The last day of service is February 8, and they want to make these final weeks memorable.

Stetina emphasizes, “We’re proud of what we built and thankful for everyone who supported us.” Vulture was their boldest venture, showcasing their commitment to plant-based cuisine. Their earlier successes include Kindred and Mothership, both praised for their unique offerings.

The closure comes despite a loyal crowd. However, Stetina’s vision involved high design and ambitious features that increased costs. He admits, “High opening and operating costs made it unsustainable.” Over the years, food and labor prices rose significantly, making it hard for any restaurant to thrive. Even the trend towards plant-based eating, which is still growing, faces challenges from a renewed interest in meat diets.

Statistics paint a clearer picture: Currently, the plant-based food market in the U.S. is valued at around $8 billion and is expected to reach between $19 billion and $30 billion by 2030. Yet, many diners are shifting their preferences, influenced by evolving health trends and economic struggles.

Stetina reflects on the changing landscape, noting, “The project took years to develop. During that time, our industry underwent significant shifts.” This closure is not just another business setback; it represents dreams and hard work. Friends in the restaurant industry have reassured him that the first closure is tough but part of the game.

Despite this loss, there’s optimism. Stetina plans to incorporate aspects of what made Vulture and Dreamboat special into his existing restaurant, Kindred, celebrating a decade of service in 2026. He’s teaming up with the community for one last celebration. If you have gift cards, make sure to use them before they close.
