Exciting News: Libertalia Coffee and Bagels Launches Food Truck Just in Time for Burger Week!

Libertalia Coffee and Bagels is on the move! They’re expanding their mobile food service with a cool, retrofitted school bus, just in time for Burger Week. This new food truck, previously known as Basil’s, allows Libertalia to serve more menu items, including creative loaded fries thanks to the new fryer.

Owner Chris Hamilton sees this as a big step for Libertalia. The business started as a coffee trailer and has become a favorite in Owensboro’s food scene. Chris and his wife moved to Owensboro from the East Coast in 2017 for a more affordable life while he finished seminary. He worked as a kitchen manager at Chick-fil-A before launching Libertalia at the Owensboro Regional Farmers’ Market in 2020.

“What began as a side gig quickly turned into my passion,” Chris shared. “The Farmers’ Market was crucial for us to share our products and keep things rolling.”

After briefly using space at Wheatgrass Juice Bar in early 2021, Chris rebranded the business to Libertalia Coffee and Bagels later that year. Over the years, the company grew, testing new ideas in the trailer before moving them to the storefront.

A major turning point came during last year’s Burger Week. Participating in the event opened Chris’s eyes to the potential of serving more than just coffee and bagels. This experience led to the East Coast Eats concept, showcasing specialty sandwiches, bagels, and, now with the food truck, loaded fries.

“Burger Week changed everything for us,” Chris explained. “It showed how versatile our mobile setup could be, which pushed us to invest in this bus.”

The new food truck, still flaunting some original black and lime green colors from its past, will be parked outside the store during Burger Week. To add some fun, Chris and his chef are having a friendly competition, featuring two different burgers: the classic Grippo burger inside the shop and a new “Chico” burger with a West Coast twist on the truck.

“This setup will improve our mobility,” Chris noted. “The real game changer isn’t just the space but the equipment. With fryers, we can offer a whole new range of food, and we won’t have to set up and take down everything for each event, allowing us to participate in more events each day.”

While the future of the original coffee trailer is still uncertain, Chris is excited for the food truck’s journey around schools, businesses, and local events like Friday After 5 and the Farmers’ Market.

For now, the priority is making a splash during Burger Week and creating a memorable experience for all customers, whether they visit the store or stop by the food truck.

“Our mission has always been to serve great food, take care of our customers, and foster a positive culture,” Chris said. “This food truck is a significant step in that direction.”
