Javier introduced this Hawaiian-style eatery to Guam in 2021, bringing it from California where it started 15 years ago. The mobile food truck has been a hit, serving tasty Hawaiian dishes at local events and night markets. However, the success of the new shop means some changes are needed.

While the food truck is still in action, the restaurant has become a priority for Javier. “The location is perfect for the local market and surrounding businesses,” he says. The shop now operates from 10 a.m. to 2 p.m. and 4 p.m. to 9 p.m., but those hours may expand as demand grows. Javier is adapting, “If we hire more staff, we could increase our hours to better serve our customers.”

The lunch crowd has exceeded expectations. Javier notes that many nearby workers are on tight schedules and seek out quick, high-quality meals. The restaurant fills a gap in downtown Hagåtña, where good lunch options are limited. “People want great food without long waits,” he explains.

Part of Pono’s success is a strong focus on building customer trust. Javier began with the food truck to gauge local interest before opening a permanent location. “The food truck helped us establish the brand and test the market. The response was fantastic, which led to this opportunity,” he says.

Interestingly, this aligns with a recent survey showing that 65% of consumers prefer restaurants that prioritize quick service and high-quality food during lunch hours. Javier’s approach not only responds to local needs but also mirrors broader trends in dining behavior.

As for menu offerings, Pono is still evolving. Javier aims to include more local ingredients and traditional Hawaiian dishes in the future. “We’re learning what our customers love while staying true to our roots,” he adds.

This blend of adaptability and quality service has positioned Pono well in a competitive market. According to a recent report, many restaurants struggle with customer retention, often due to slow service or a lack of variety. Javier seems to have found the right formula to keep people coming back.
