London’s culinary scene is buzzing with a new spot that aims to bring authentic Indian flavors to the forefront. Biryani Kebab Chai, or BKC, launched its unique series called “Biryani Bharat Yatra,” showcasing India’s diverse cuisines. After highlighting Kashmiri Yakhni Pulao last month, May focuses on the Ambur Biryani from Andhra Pradesh.
Subhajit Mitra, the founder of BKC, emphasizes the shift in how Indian cuisine is perceived in the UK. Traditionally, Indian food abroad has often been simplified into a “curry house” stereotype. Now, both Indian and non-Indian diners are craving deeper culinary experiences. They want to know the stories behind dishes and the differences between varieties, like Seekh and Galouti Kebabs or Awadhi and Ambur biryanis. “This curiosity is incredibly exciting,” says Mitra.
BKC opened its first restaurant in 2022, aiming to create a shared dining space reminiscent of traditional Indian communal meals, or dastarkhwan. Mitra and his team are striving to highlight the royal heritage of regional Indian food. While London is home to a vibrant array of Indian restaurants, he noticed many offer generalized menus that often lose the essence of each dish.
Chef Arsh Thakur, BKC’s Head Chef, collaborates closely with Mitra to celebrate Indian festivals through food. Their recent Poila Boiskakh event for Bengali New Year was a success, and they plan to continue hosting special menus for future celebrations like Durga Puja, Diwali, and Eid. “We envision BKC as a hub for Indian festivities in London, where authentic flavors and cultural celebrations unite,” Mitra adds.
Interestingly, recent studies show a growing trend in the culinary industry: diners are increasingly seeking authentic, regional experiences. A survey by the National Restaurant Association suggests that 65% of consumers want more transparency about food origins, which aligns perfectly with BKC’s mission. As Indian cuisine evolves abroad, BKC is positioned to lead the charge, providing its guests with a true taste of home.
