To address this challenge, food Bank of the Rockies uses its “Food Rescue” program, collaborating with grocery stores to collect surplus food. This can include ‘imperfect’ produce and overstocked items that might otherwise go to waste. Dusty Lightfoot, the Retail Food Donation Coordinator at the food bank, explains that many perfectly good products are discarded before they reach customers due to strict store standards. By working with grocers, the food bank can send these items to those in need.

Last year, Food Bank of the Rockies rescued 3.7 million pounds of food, which is part of a larger distribution of 12.5 million pounds across western Colorado. This effort is showing promise, with a 2% increase in their food rescue program output reported for the last fiscal year, indicating strong community support and engagement.

The organization reports that their partnerships are growing, not just with large chains like Walmart and Sam’s Club, but also with smaller businesses and local restaurants. In fact, over a third of the rescued food last year came from the two major retailers. Their initiatives, such as the Fight Hunger Spark Change Campaign, engage customers in making donations that directly benefit local communities.

According to recent data from Feeding America, the trend of food insecurity is not just impacting big cities. Rural areas are experiencing significant food shortages as well. To combat this, organizations like Food Bank of the Rockies are enhancing their logistics to distribute food more efficiently. By empowering local food partners, they help ensure that food reaches rural communities quickly, reducing waste significantly.

Moreover, many hunger relief partners now operate their own refrigerated trucks to transport food, which enhances safety and efficiency in food handling. Lightfoot emphasizes the importance of food safety training for all partners, ensuring that food remains safe from collection to distribution.
