“I’ve always wanted to learn how to cook,” she shared. While online videos can teach basics, she believes that some skills, like proper knife techniques and fish filleting, really need in-person instruction.

Enciso’s drive to cook stems from her mother-in-law, known for preparing elaborate family meals. “When I visit her, she serves ten different dishes, and it inspires me. I want my kids to come home and say, ‘Ahh, my mom’s lasagna,’” she reflected.
On her first day in the CCA kitchen, she felt a mix of anxiety and excitement. “Honestly, I was nervous. Cooking at home is one thing, but this environment was new for me. By the end, I felt confident enough to cook dinner for my husband, showing off my knife skills,” she recalled.
Her passion lies in traditional Filipino dishes that bring families together. She’s also aiming high and dreams of mastering complex dishes. “When asked about my dream dish, I mentioned Peking Duck or Cochinillo. I can’t wait to learn to make Cochinillo,” she said.
CCA Manila’s decision to open a campus in an academic setting is strategic. Dr. Veritas Luna, CCA’s Chancellor, points out that it creates an accessible and inspiring atmosphere for students. “Learning in a focused environment helps students thrive without distractions,” he explained.
The University Hotel campus offers programs like Culinary Arts, Baking & Pastry Arts, and a Professional Chef Plus course for working professionals. They are also introducing specialized courses in Filipino Cuisine, Sports Nutrition, and Culinary Wellness.
Beyond cooking, Enciso’s journey reflects a growing trend where influencers are broadening their skills and exploring new interests. In 2022, a survey indicated that 65% of social media influencers are seeking educational opportunities to enhance their expertise.
