Eric Vonheim took a bold step away from his software engineering career to follow a tasty dream. He launched the Frylicious food truck in Laguna Niguel, California, in January 2023. His mission? After years as a techie, Eric grew tired of the monotonous routine. He started craving the late-night bites he enjoyed while coding—especially crunchy fries paired with flavorful sauces. “Fries are universal,” Eric shared. “Everyone loves them, no matter where they’re from.” With that thought in mind, he decided to create a simple and fun food truck concept.

Initially, Eric considered a brick-and-mortar restaurant but shifted gears when negotiations fell through. A pop-up booth at local markets seemed tempting, but he ultimately realized that a food truck would offer more flexibility and reach. And so, Frylicious was born.

The menu at Frylicious features various fries, from classic to sweet potato, alongside chicken nuggets and a selection of delectable sauces. Their most popular dips? Ketchup, fry sauce, ranch, and BBQ. Eric believes this menu appeals to all ages, making it easy for customers to enjoy any time of day.

While Eric and his team cook both on the truck and in a commissary kitchen, his favorite part of running a food truck is the community. “Meeting new people and building relationships is so rewarding,” he explained. However, it’s not all sunshine—he humorously mentioned that emptying fryer oil is one of the less glamorous tasks of the job.

Eric has learned many lessons along the way. “Take your time to find what works for you,” he advises. The first year in business is a learning curve. He wishes he’d volunteered with another food truck first to gain firsthand experience.

In today’s food truck scene, trends are growing. According to a recent report by the *Food Truck Nation*, the food truck industry is projected to reach $1 billion in revenue by 2026. This reflects the rising popularity of food trucks as convenient culinary hotspots across the U.S. Social media plays a significant role too, allowing entrepreneurs like Eric to connect with local communities and build a loyal customer base. Many food trucks now showcase their meals on platforms like Instagram, where mouthwatering photos drive engagement.

In just a short time, Frylicious has participated in exciting events with the Los Angeles Angels baseball team and other high-profile groups. These experiences, filled with energy and non-stop service, have become cherished memories for Eric and his team.
