Andrew Cisneros has a rich culinary background, having worked with renowned chefs in St. Louis, such as Pierre Chambrin and Gerard Craft. As of 2025, he not only co-owns two restaurants but has also become the new food partner at Rockwell Beer Co. in the Grove.
When looking for his next restaurant space in 2023, Cisneros reached out to Chris Hulse, co-owner of Rockwell, about a vacant spot in Tower Grove. Though they didn’t collaborate right away, their chat led to a partnership in 2024 to revamp Rockwell’s menu, which was introduced earlier this year.
“Breweries should be experimenting and innovating. The previous menu had limited options. With Andrew’s fresh perspective, everything is much more exciting,” Hulse said.
Combining his Peruvian roots with European culinary training, Cisneros brings unique flavors to his establishments. His restaurants, Jalea in St. Charles and Brasas in the Delmar Loop, showcase his innovative approach. The new menu at Rockwell features what he calls Peruvian-American cuisine, including standouts like the Chancho Sando and a unique twist on the traditional American burger.
“We’re all about creativity and keeping things fresh for our customers. At both Brasas and Jalea, our specials offer something new and exciting. Our goal is to merge the best of both Peruvian and American cuisines,” Cisneros shared.

Rockwell Beer Co. opened its first location in the Grove in November 2018, followed by a second in Francis Park in 2021. When Cisneros joined, he aimed to keep the core menu, focusing on burgers and fries, while adding his personal touch.
“Andrew has made a huge difference in our operations. He enhances quality, simplifies training, and aligns our offerings,” Hulse remarked.
As the holiday season approaches, Rockwell is getting into the festive spirit with plans for a Candy Cane Lane Run on December 10 and a Holiday Market on December 14, featuring llamas.
This collaboration not only highlights Cisneros’ culinary journey but also reflects the growing trend in chef-led partnerships with local breweries. As consumers seek unique dining experiences, this venture stands out, merging craft beer and innovative cuisine seamlessly.
