NEW YORK – We all have our thoughts on hospital food—often bland and unappealing. But Northwell Health is working on a fresh approach to change that. They’re collaborating with renowned chef Bruno Tison to create meals that bring joy and flavor right to patients’ bedsides.

At South Shore University Hospital, Chef Brian Sauer is leading this culinary change. Together with Tison, they are designing a seasonal menu that feels more like dining at a fine restaurant than in a hospital.

“Gone are the days of dull mashed potatoes,” says Linda Allison, a senior director at Northwell. The new menu highlights plant-based dishes sourced from local farms, aiming to boost both taste and health for patients. Each dish is crafted to be visually appealing, nutritious, and inviting.

Patients are already noticing the difference. Bob Musto, who is recovering from surgery, mentioned, “I’ve had hospital food before, and this is way better.” The feedback highlights a shift toward quality meals that promote healing.

Clinical Nutrition Manager Helen Conza underlines the connection between food and recovery. She believes that good nutrition plays a crucial role in how quickly patients get back on their feet. “When people eat our food, that’s how they heal and feel better,” she explains.

Chef Sauer also emphasizes the comfort that comes with enjoyable meals during tough times. “Comfort food can make a world of difference,” he states, indicating that it helps patients feel a little more at home while they recover.

This initiative by Northwell Health highlights a fascinating shift in how we view hospital food. It’s more than just meals; it’s about nurturing patients both physically and emotionally.
