Indulge Your Sweet Tooth: Join Us for the 11th Annual UMass Food Science Ice Cream Competition on May 8!

Four student groups are excitedly wrapping up their unique ice cream flavors for the 11th Annual UMass Food Science Ice Cream Product Development Competition. This free event invites students, staff, and the public to enjoy some tasty samples.

Join the fun on May 8, from 4:30 to 7 p.m. at Furcolo Hall, room 125, 813 N. Pleasant St. You can be one of the first 100 people to taste the flavors and help vote for the People’s Choice Award!

Charmaine Koo, a food science lecturer, shared, “This year’s flavors are quite exotic.” She has guided students in the food processing lab, helping them think outside the box in creating their ice cream.

For the sixth year, the competition partners with Judy Herrell, the founder of Herrell’s Ice Cream & Bakery. She will judge the entries alongside her staff, focusing on texture, flavor, and sustainability. Herrell’s ice cream shop in Northampton has featured winning flavors, giving students a chance to see their creations on a real menu.

This capstone project allows senior food science majors to apply what they’ve learned about microbiology, chemistry, and nutrition in a practical setting. They refine their skills while preparing for careers in food science.

Last year’s winning flavor, Brown Butter Miso Caramel, was a hit, showcasing the creativity and dedication of the students. It featured made-from-scratch caramel blended with nutty butter bits.

Ice cream trends can vary widely, with some flavors gaining popularity on social media. For instance, many dessert lovers have been sharing their experiences with unique flavors like lavender honey and spicy chocolate. Recent surveys indicate that 75% of ice cream lovers enjoy trying new, adventurous tastes, showing a shift in consumer preference toward more exotic options.

This competition is more than just a fun event; it reflects the growing interest in culinary innovation. Students not only get to showcase their skills but also contribute to a food culture that embraces creativity and sustainability.
