**SALAMANCA, NY** — Exciting news for food enthusiasts! Cornell Cooperative Extension is offering a three-day workshop on food preservation from October 7 to 9. This course is perfect for anyone wanting to elevate their food preservation skills.
Participants will dive into the science of food preservation, focusing on safety and the most effective methods. The hands-on training will cover boiling water bath canning, pressure canning, making jelled products, quick pickling, and more. You’ll also see demonstrations on freezing, drying, and fermentation. This year’s workshop was prompted by strong interest, as the last course in April 2024 sold out quickly. Kelly McDonald, Executive Director of CCE, mentioned that “people want to learn safe ways to preserve food for their families.”
Completing this course can be your first step toward becoming a Master Food Preserver Volunteer. Volunteers will enjoy discounts on future classes and can help teach community members about food preservation techniques.
The cost for the three-day course is $350, which covers all materials, supplies, and lunch each day. The class is limited to 15 participants to ensure a great learning experience. Interested in signing up? You can register by calling the CCE office or online at reg.cce.cornell.edu/3DayPreservationClass-25_258. For more information, reach out to the Cornell Cooperative Extension of Cattaraugus at (716) 699-2377 ext. 100.
Food preservation is more relevant today than ever. In recent years, many families have embraced home canning as a way to ensure their food stays fresh and healthy. According to the USDA, the interest in home canning surged by over 20% in 2020, reflecting a broader trend in home cooking and self-sufficiency.
